It's been a long time since I did a What I'm Eating Wednesday. Too long! And with this blizzard upon us (seriously, we are in the middle of a blizzard as I type this), what can be better than a hot bowl of yummy home made soup?
And this one is ridiculously easy to to put together. With only five main ingredients, it an easy weeknight or snow day meal that you can prepare and go play in fluffy white stuff while it simmers down. Trust me, your kids, partner, and belly will ALL thank you when you're done.

We set out to drive out along the Delaware again, but this time to Narrowsburg NY and with doggy in tow. We only got as far as the Chatterbox Drive-In in Augusta, NJ though. Neither one of us could ignore the parking lot full of hot rods, so it took about a minute before we decided to turn around.

Heavenly Hash {What I'm Eating}
Ah, sweet potatoes! Next to avocados, my favorite item to add to most meals is a yummy sweet potato. Even without seasoning or toppings, just simply baked (or sometimes I cheat and make them in the microwave) and cut up, they are a great addition to most any dish. Steak, some sautéed veggies, and a sweet potato = heaven! Once in a while though, I get to make them the main event in my mealtime show.

It's hot in New Jersey, I mean sweltering. And I don't usually mind the heat. The humidity is totally doing me in at the moment, so staying cool is key. Part of that is getting some yummy coolness into my belly.

My Latest Food Obsession {What I'm Eating}
My days are not completely consumed with creating event details. I'm also a huge foodie!
Making dinner every night is one of my favorite parts of the day. Especially when I'm trying a new recipe. I have a great list of recipes on my Pinterest Boards: Get Into My Belly and Busy Body. When I get to try out something new, it's exciting. Especially when it tastes as yummy as I had hoped.
