Berrylicious {What I'm Eating}

Fruit and I have always had this amazing love affair. Summer is my favorite time of year for many reasons, but especially because I can get my berry fix with the freshest fruit out there.

Strawberries, blueberries, raspberries, blackberries - the list goes on. If you were to talk to anyone who has rung up my groceries, you'd probably hear stories of the girl who buys every kind of berry they carry plus some veggies, meat and cheese.

Anything fruit filled, topped, or infused is my kind of food or drink. I make water to drink almost every day with fruit, cucumbers, mint, and fresh ginger.  The flavor is amazing and its really good for you.

If you follow me on Instagram, you know that most days, my lunch consists of a salad topped with chicken and fruit or veggies. But my favorite by far is fairly simple to make and truly delicious. Spring mix and baby spinach, some pan fried chicken thighs, strawberries, blueberries and my very own home made sesame ginger dressing.

I tend to eat grain free and paleo or at the very least gluten free (but I do sneak in some goodies here and there), so the base for this is paleo mayo.  My friend Melissa of I Was Born to Cook, has a great home made mayonnaise recipe that's Whole30 and paleo compliant. Of course if you're not up for that you can just skip it or use regular mayo, but the homemade stuff is great because it adds flavor. The dressing itself isn't exactly paleo, but I've given you some substitutions to help with that.

Sesame Ginger Salad Dressing

2 T Paleo Mayo
2 T Raw Honey
1 T Rice Wine Vinegar (or Coconut Vinegar)
1 T Soy Sauce (or Coconut Aminos)
1 T Sesame Oil
1/8 tsp Ground Ginger
1/8 tsp Paprika

Put all ingredients in small bowl and whisk until mixed well. The honey is usually the last part to mix in, so once you don't see that at the bottom of the bowl anymore, you're good to go. VERY EASY!

Refrigerate any leftover dressing in a closed container and use within one week.
